Protein Blueberry Cheesecake

Makes 6 pieces
INGREDIENTS
1 cup cottage cheese (250 grams)
1 cup Greek yogurt (233 grams)
2 eggs
1/4 cup pure maple syrup (80 grams). If you want it sweeter, you can add 1-2 extra tablespoons
1/4 cup non-GMO corn starch (I have also used arrowroot when I was out of cornstarch) (40 grams)
1 tsp pure vanilla extract
1 cup frozen blueberries, raspberries, or cherries.
DIRECTIONS
Blend all the ingredients except the berries until smooth.
Pour into a parchment paper-lined baking dish (I use my loaf pan).
Bake at 365 °F for 45-50 minutes (I do 48 mins in my oven).
Let it cool, then transfer to the fridge for a few hours to set.
Slice, take 3 mindful, slow breaths in and out, and enjoy!
